Today, my dad had called me to the kitchen and help prepare pancit. What is pancit? Pancit is a Filipino dish containing noodles and vegetables, sometimes with seafood and meat, mixed with special seasoning and sauces. So today, I helped cut vegetables, preheat left over barbeque and chop them for the wok. On a wok, vegetables and meat are dropped and sauteed over medium heat. After slightly browning the ingredients, they are moved to a bowl. While still hot, a can of chicken broth is poured on the wok, uncleaned from the ingredients left over, and with the same can, water is filled up to the whole can and poured also. Bringing the liquid to a boil, the noodles are rinsed in cold water and then drained and dropped into the wok. After the noodles are soft and liquid almost gone, the vegetables and meat are dropped back in, with soy sauce, fish sauce, and some seasoning. Mix until all liquid is gone and taste for more seasoning or adjustment.
Once all my pancit was done, my mom, dad, and me and mom’s coworkers, ate the pancit.. leaving a wok with a small portion left.
